Roasted Endive with Grape Tomatoes










2 to 3 Endive, bottoms slightly trimmed cut lengthwise
8 to 10 Grape tomatoes, cut in half if need be
About 1/4 C. Balsamic Vinegar
Sea Salt and Pepper to taste

Place all in a roasting pan and drizzle with the vinegar and seasoning.  Place in a 400 degree oven and roast for about 20 to 30 minutes.  Top with goat cheese for an added kick!
